Hyssop (Hyssopus officinalis) is a perennial mint family shrub native to Southern Europe, the Middle East, and regions surrounding the Caspian Sea. Historically, hyssop was used for ritual purification in biblical times, although the exact hyssop species used is contentious. Leaves and flowers of the plants are aromatic and have both culinary and medicinal uses (antiseptic, cough reliever, expectorant properties), as well as being used as an ingredient in liquors such as Absinthe. Flowers are prolific and attract numerous beneficial pollinators such as butterflies and bees. Hyssops also make a great companion plant with other hardy shrubs such as lavender. The cold hardy nature of this hyssop makes it ideal for colder winter climates.
