Green Fleshed Ayote Winter Squash is Guatemalan landrace with green flesh. Rinds are either green or tan striped; the green flesh is more subtle when fresh, but develops into a green/brown when cooked. Very delicious when roasted - a butternut-like flavor but sweeter and creamier.
